I recently found out that all of the employees in my workplace went from getting hourly pay to being salaried. This apparently changed some time ago but none of us were notified until just this week. Are employers required to give written notice of a change such as this?

I do not know if there is a law requiring employers to notify employees of a change from hourly to salaried status.  I'm not sure why the employer would not notify the employees, though.  Certainly, under Massachusetts employment law, a company cannot avoid overtime pay requirements simply by changing employee status from hourly to salaried.  Generally, overtime must still be paid to non exempt employees, even if they are salaried.  Follow the above link for more information, but the most common exemption is for white collar employees, aka "executive, administrative, or professional" under MA law.  Hope that helps.
